Who are you?
Fulton Galley is a unique Chicago Food Hall. Our mission is to cultivate and accelerate aspiring local restaurateurs by providing a forum to showcase their capabilities, hone their craft, develop business acumen and build a cult following behind their concepts.
How long have you been in the neighborhood?
We had our grand opening on June 22, 2019!
Why the West Loop?
The West Loop is a hub for innovation. We have been watching from a distance [as] many old factories are converted into the homes of profitable business ventures, along with the art that has brestored life back into the streets of what was once known as strictly an industrial area. Safe to say, we saw a lot of potential and positive energy in the West Loop, that we knew we needed to be a part of. We wanted to keep the hard-working aspect of the old West Loop and combine it with an innovative food hall concept that we hope to share with the whole West Loop community!
What are your top challenges in growing your business?
Our main challenge stems from awareness; because we are a new establishment, we want to make Fulton Galley known and become a hotspot [that] every type of individual can enjoy. With our five different restaurants and bar, we feel confident that we have something for everyone to enjoy!
Why did you join the West Central?
We want to show our support among the community as much as possible, but first we must get acquainted with our neighbors. Joining the West Central Association provides us with a quick and easy way to stay engaged and up to date on what is happening in the area!
What makes Fulton Galley unique?
The food and beverages that we serve and how we serve them are what makes us stand out. Our simple ordering process starts by choosing your favorite meal, beverage, or both; ordering it, and lastly, finding a comfortable space to relax while one of our staff delivers your order to your table for you to indulge in. Our large, open space has over 200 seats including large format tables and more intimate seating options.
What gets you up in the morning?
Aside from coffee, knowing that I get to come into work every day and see such friendly faces, while working out of such a lively and thriving area of Chicago, is enough to get me up in the morning!
What’s your favorite part of the West Loop?
Being a food hall, we love the diversity of food and beverage options in the West Loop.
What does the future of Fulton Galley look like?
Like most things, we view the future of Fulton Galley as constantly evolving. Our steady hope is that our chefs and their restaurants are able to thrive in this environment. We plan to listen and respond to the food trends and cravings of the community as best as possible!
